[00:01:12] We're out of practice

[00:01:14] We haven't done it daily since last holiday season

[00:01:20] We've been doing this for five seasons now

[00:01:21] And you go into autopilot when you hear the music

[00:01:24] And all of a sudden it's very jarring

[00:01:25] It's different, but it is wonderful

[00:01:30] But it doesn't take long for us to get into it

[00:01:33] It's always like, are we really doing this?

[00:01:35] I'm like, yes, we are doing it

[00:01:37] And we're thrilled to be back for another season, Scotty

[00:01:41] And I understand

[00:01:42] We still got mail

[00:01:44] Which is exciting

[00:01:44] This show is very heavily driven by the audience

[00:01:48] So it's always good when we have mail

[00:01:50] I see the mailbag moving

[00:02:19] Of the most wonderful sounding foods

[00:02:21] And we put the question out to David

[00:02:27] How does this come together?

[00:02:28] So David replied to us

[00:02:30] And said the typical menu would be as follows

[00:02:32] Enchiladas, tacos, beans, rice, guacamole, pico

[00:02:35] And bunuelos

[00:02:37] And he says the bunuelos are a personal favorite

[00:02:39] Dipped in paste, medium, or hot picante sauce

[00:02:42] First, stop selling

[00:02:43] This sounds so amazing

[00:02:46] We also shred a lot of cheese

[00:02:48] And chop many, many jalapenos

[00:02:50] Tomatoes, onions, and lettuce

[00:02:52] The vegetables are insane

[00:02:53] So the person on pico and guac

[00:02:55] Has to chop the veggies

[00:02:56] The meat is made as filling

[00:02:58] So like a restaurant

[00:02:58] You can fill a taco shell

[00:02:59] Put it on a tostada

[00:03:01] Make an enchilada, etc

[00:03:02] Once the filling is made

[00:03:03] You can quickly apply it to any entree you wish

[00:03:05] Alright, that makes sense

[00:03:06] If my mom gets ambitious

[00:03:08] She will also add chili rodeno

[00:03:10] We do nachos, chilies, desserts

[00:03:12] And other dishes on birthdays

[00:03:13] Football games

[00:03:14] And other occasions

[00:03:15] If someone wants to get in the kitchen

[00:03:18] And help cook

[00:03:18] They are welcome to add

[00:03:19] Whatever dish they want

[00:03:20] My kitchen can handle

[00:03:22] Three to four people cooking

[00:03:23] But it's cramped

[00:03:24] We do not make our own tortillas

[00:03:26] Because here in Texas

[00:03:27] It's easy to get good fresh tortillas

[00:03:29] And tamales

[00:03:30] They're not all equal

[00:03:31] So you have to find the right place

[00:03:33] Occasionally we have a door-to-door

[00:03:35] Tamale saleswoman

[00:03:37] I do not open my door to solicitors

[00:03:39] Except for tamales

[00:03:40] And it's really the only food

[00:03:41] That I'll buy

[00:03:42] Without caring about

[00:03:43] How or who makes it

[00:03:45] It will be my downfall someday

[00:03:47] That was my first thought

[00:03:48] When I read that brand

[00:03:50] Like beef

[00:03:51] Unrefrigerated beef here

[00:03:52] Ding dong

[00:03:54] Once my mama-san

[00:03:55] My grandmother

[00:03:56] Passed in the mid-90s

[00:03:57] The number of people

[00:03:58] Dwindled from 35 to 45

[00:04:00] To a little over a dozen

[00:04:02] Because that kind of life event

[00:04:04] Fractures the family

[00:04:05] The cousins took their copy

[00:04:06] And it morphs into something

[00:04:07] Similar yet different

[00:04:08] For example

[00:04:09] My family needs to update it

[00:04:10] With three more dishes

[00:04:11] We incorporate every year

[00:04:12] Such as pico de gallo

[00:04:13] Fried pies

[00:04:15] And tamales

[00:04:16] Fried pies

[00:04:17] Funny thing though

[00:04:18] This book came from

[00:04:20] My father's mother

[00:04:20] My parents divorced in 1984

[00:04:22] But my mother still cooked

[00:04:23] These dishes

[00:04:24] My parents were rare

[00:04:25] And remained friends

[00:04:26] Even when both remarried

[00:04:27] Because my stepdad

[00:04:28] Was an incredible man

[00:04:29] And encouraged civility

[00:04:30] They would invite my dad

[00:04:31] To Christmas dinner

[00:04:32] Every year

[00:04:32] To enjoy mama-san's recipes

[00:04:34] Up until he died in 2020

[00:04:36] This book has healing powers
